Most of us could stand to eat more plants. In fact, an estimated 90% of Americans do not get their recommended intake of fruits and veggies. Eating more produce helps lower your risk of heart disease, diabetes, and even some cancers. There are many types of plant-based diets, but they all emphasize certain foods associated with heart benefits, such as whole grains, fruits, vegetables, legumes, nuts, and healthy oils like olive oil. The diets that have been most studied for their impact on heart health include the Mediterranean diet, the DASH diet, and the MIND diet. These diets are rich in fiber, vitamins, and minerals that not only reduce disease risk but help to maintain a healthy weight.

• Identify the key dietary components of plant-based diets.
• List the differences between a plant-based diet and a Vegan diet.
• Explain how plant-based diets reduce blood pressure, improve glycemic control, and reduce obesity.
• Identify dietary components of a plant-based diet responsible for slowing the progress of atherosclerosis.
• Develop strategies to assist patients in adopting and adhering to plant-based eating practices.
• List key nutrients that may be deficient in plant-based diets and strategies for achieving adequate intakes of these nutrients.
